Barely Baked Brown Butter Brownies

Most brownie recipes are afraid of the oven timer. This one isn't. Twenty-five minutes at a low, steady 300°F is exactly enough to set the edges and leave the middle barely baked — which is the whole point of the name.

The flavor does the heavy lifting before the batter ever hits the pan. Brown butter, poured hot over two different percentages of Valrhona, blooms the cocoa and espresso powder right along with it, so every bit of chocolate flavor actually wakes up instead of sitting flat. Whip the eggs and sugar long enough and you get that glossy, crackly top for free. Fold in the flour by hand, chill hard to lock in the fudge, and cut clean with a hot knife.

Chef's notes

  • Bloom the cocoa and espresso. Pouring hot brown butter directly over them wakes up flavor that stays muted if you just whisk them in cold.
  • Swap the chocolate if you like. Any two chocolates work here — just always use two different kinds, one dark and one milk. The contrast is what deepens the flavor.
  • Whisk the eggs and sugar for the full 3 minutes. That's what dissolves the sugar and gives you the glossy, crinkly top everyone's chasing.
  • Fold the flour by hand. Once the flour goes in, switch off the mixer — overworking it here toughens the crumb.
  • Don't skip the fridge. Chilling immediately stops the carryover cooking, which is what keeps the center barely baked instead of overdone.
  • Cut with a hot knife. Run it under hot water and wipe between cuts for clean, bakery-style edges.

The recipe

For the brownies

  • 113 g 64% Valrhona chocolate
  • 57 g 40% Valrhona chocolate
  • 255 g butter, melted and browned
  • 150 g granulated sugar
  • 150 g light brown sugar
  • 4 eggs
  • 85 g all-purpose flour
  • 63 g cocoa powder
  • 2 tsp sea salt
  • 2 tsp vanilla paste
  • ¾ tsp espresso powder

Method

  1. Brown the butter in a saucepan until fragrant and deep golden.
  2. Pour the hot brown butter over the chocolate, espresso powder, and cocoa powder. Combine and let sit so the espresso and cocoa fully bloom. Set aside.
  3. Beat the sugars, vanilla paste, salt, and eggs together until light and fluffy, about 3 minutes — whisk long enough to dissolve the sugars for a glossy, crinkly top.
  4. With the stand mixer on low, add the chocolate-butter mixture until incorporated.
  5. Add the flour and, by hand, fold until just incorporated.
  6. Spray and line an 8x8 brownie pan with parchment paper.
  7. Pour the batter into the pan and spread evenly.
  8. Bake at 300°F for 25 minutes.
  9. Immediately transfer to the refrigerator to stop the cooking. Cool for 2 hours.
  10. Cut with a hot knife for clean edges and enjoy.
