Vanilla Pound Cake that drinks

Pound cake gets a bad reputation as the dry, polite cake at the back of the bakery case. This is not that cake. The trick isn't in the batter — it's what happens after it comes out of the oven, while it's still warm enough to drink.

Butter brings the flavor; a little grapeseed oil keeps the crumb tender and moist even cold. We pipe the batter instead of pouring it so the long loaf fills evenly with no big air pockets. And then we soak it — three times, five minutes apart — so every brush of vanilla syrup actually sinks in instead of running off the top.

Chef's notes

  • Everything at room temp. Cold butter, eggs, and sour cream won't cream properly and can split the batter. Pull them out an hour ahead.
  • The grapeseed oil is the move. Butter for flavor, neutral oil for a crumb that stays tender — even straight from the fridge.
  • Pipe, don't pour. A piping bag fills the narrow loaf pan evenly and knocks out the big bubbles that leave holes in your slices.
  • Don't overmix the dry. Fold with a spatula just until combined — overworking builds gluten and toughens the crumb.
  • The triple soak is the whole point. Warm cake drinks syrup. Three passes with a rest between each lets it absorb instead of pooling. Patience here is what keeps it moist for days.

The recipe

For the cake

  • 84 g butter, room temperature
  • 84 g grapeseed oil
  • 250 g vanilla sugar
  • 4 eggs, room temperature
  • ½ tbsp vanilla bean paste
  • 60 g sour cream, room temperature
  • 180 g flour
  • ¾ tsp baking powder
  • ¼ tsp salt

For the vanilla syrup

  • 100 g water
  • 100 g sugar
  • 1 tsp vanilla bean paste

Method

  1. Make the vanilla syrup: combine the water and sugar and warm, stirring, until the sugar fully dissolves. Off the heat, stir in the vanilla paste. Set aside.
  2. Cream the butter, grapeseed oil, and vanilla sugar until light and fluffy.
  3. Add the eggs one at a time, fully incorporating each before the next. Add the vanilla paste with the last egg.
  4. Mix in the sour cream until just combined.
  5. Add the dry ingredients and fold with a spatula just until combined.
  6. Grease a 13.75 × 2.75 × 2.75 in loaf pan. Transfer the batter to a piping bag and pipe it evenly into the pan.
  7. Bake at 325°F for 35 minutes.
  8. Turn the loaf out onto a wire rack.
  9. While still warm, generously brush the top and all sides with vanilla syrup. Wait 5 minutes, brush again. Wait another 5 minutes, then brush a third and final time. Let cool.
